Tropical Frozen Yogurt Fruit Bark Recipe

Try this recipe’s tropical twist: Sweet mango and passion fruit unite under a sprinkling of dried hibiscus flowers and toasted coconut. Ingredients:

  • 1 cup vanilla greek yogurt
  • 1/4 cup frozen passion fruit puree cubes, diced
  • 1/4 cup mango, diced
  • 1 teaspoon dried hibiscus flowers, minced or ground
  • 1 tablespoon toasted coconut flakes
  • Lime zest, from one lime
  • Honey, optional drizzle

Directions:

  • Spread Greek yogurt on a sheet pan lined with parchment paper to create an even layer.
  • Sprinkle passion fruit, mango, hibiscus flowers, coconut flakes and lime zest over yogurt.
  • Transfer sheet tray to a freezer for at least 2 hours or overnight, until yogurt is frozen solid.
  • To serve, remove yogurt bark from freezer and break into pieces. If desired, top each piece with a drizzle of honey. Serve immediately.

Passion fruit puree cubes are available at many supermarkets in the frozen fruit aisle.
