Cowboy Cottage Cheese Chocolate Chip Cookies

Just “stirrup” the following baking ingredients, including cottage cheese. That’s right, cottage cheese! That’s because this dairy food is an excellent source of protein with the power to make hearty cookies tender. 

Ingredients:

  • 3 cups all purpose flour, or whole wheat flour
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1 cup full-fat cottage cheese
  • 1/2 cup butter, at room temperature
  • 1 1/2 cups sugar
  • 1 1/2 cups light brown sugar, packed
  • egg
  • 1 tablespoon vanilla extract
  • 3 cups semi-sweet chocolate chips
  • 3 cups old fashioned oats
  • 2 cups walnut, chopped
  • 2 cups unsweetened coconut flakes

  • Heat oven to 350 degrees.

for Cottage Cheese Cookies

  • Mix flour, baking powder, baking soda, cinnamon and salt in a bowl.

  • In a very large bowl, beat cottage cheese and butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars and combine thoroughly.

  • Beat in eggs and vanilla.

  • Stir in flour mixture until just combined. Stir in chocolate chips, oats, nuts and coconut.

  • For each cookie, drop ¼ cup dough onto baking sheets lined with parchment, spacing 3 inches apart. Flatten each cookie slightly with the bottom of a glass.

  • Bake for 15 to 17 minutes, until edges are lightly browned; rotate sheets halfway through. Remove cookies from rack to cool.
